ACCOMPLISHED RESTAURANTEUR
Seth Glassman is an accomplished restauranteur who has been in the hospitality industry for twenty years. Leaving his native New York City, he earned a degree from the A. B. Freeman School of Business at Tulane University in New Orleans. His earliest dining experiences in two of the greatest food cities in the country led him to try to conquer the West Coast.
MULTIPLE FOOD SERVICE OUTLETS
In 2002 he moved to Los Angeles and began his impressive rise in the competitive world of fine dining. He quickly became an integral part of the food scene, working at the Palm Steakhouse in downtown LA. Within one year he was promoted, affirming his extraordinary skills. After several years he took on a position overseeing the acclaimed Belvedere restaurant in The Peninsula Hotel – Beverly Hills. Seth developed his innate ability to handle multiple outlets, overseeing all food service areas, including restaurant, pool, lounge, and bar.
INVALUABLE HOSPITALITY MANAGER
His expertise and qualifications were very attractive to other organizations and in 2005 he joined Innovative Dining Group. In short order, he proved to be an invaluable manager and worked in several restaurants, including Katana on Sunset Boulevard. He supervised award winning beverage programs, revamped training procedures, helped develop concepts and menus. Seth is particularly proud of the work he did in mentoring numerous managers. In his eight years with IDG he rose in the organization, reflecting the way he was viewed by the partners. One of his greatest accomplishments was the successful opening of the Sushi Roku restaurant in the W Hotel in Scottsdale. From 2008 to 2009 he was involved with all aspects of food operations and closely coordinated with hotel management.
THE RESTAURANT FLOURISHED
Then, as 2009 drew to a close, IDG asked Seth to return to LA to oversee their newest venture, BOA Steakhouse in West Hollywood. The restaurant flourished under his supervision. BOA is a 12,000 square foot space with 300 seats and caters to some of the most powerful people in all of LA. As GM he had a staff of over 150 employees and personally had ten direct reports. During his time there (2009-2013) the topline revenue grew exponentially, going from $10 million to $13 million dollars.
NUMEROUS ACCOLADES
Eager to spread his wings, in 2013 Seth and his business partner successfully opened Pistola, an upscale Italian steakhouse in West Hollywood. This daring concept received numerous accolades from the LA Times for food, design and service before he left in 2015.
ALL ASPECTS OF THE BUSINESS
With the changes in downtown LA that had happened over the last ten years, Seth was curious to try his hand in this new environment. He became Director of Operations for Downtown Entertainment Group (Takami Restaurant and Elevate Lounge). In this capacity he was responsible for all aspects of the business (bookkeeping, human Resources, training, staffing, financials, service, food and beverage, catering, marketing and public relations).
MASTERED THE RESTAURANT BUSINESS
But the entrepreneurial spirit burned bright and Seth took a leap to move to the Midwest for a new exciting dream. With his business partner, he opened an upscale classic American restaurant – 6S Steakhouse in Wichita, Kansas. He helped design and rebuild the 10,000 square foot space, working with the general contractor to bring the project in on budget. He helped obtain permits, instituted human resource policies, created training manuals and worked out deals with multiple vendors. Branding, marketing, budgeting; there’s no aspect of the business that Seth has not mastered.
HOSPITALITY INDUSTRY IS SETH’S PASSION
As demonstrated by his extensive resume, the hospitality industry is Seth’s passion. This shows in his projects, the relationships he has with his guests and the vast amount of experience he shares with them. He knows firsthand the challenges and joys of owning and operating a restaurant and views his job as a partnership with his clients in their journey.
